Walnut Squash Chard with Golden Raisins by @livinlaveganlife! 🥰
Ingredients:
1 1/2 lbs Squash peeled and diced
2 tbsp Olive Oil
1 cup Walnuts roughly chopped
1-2 lbs Red Swiss Chard
1/2 tsp Ginger Powder
1/2 tsp Cumin
1/2 tsp Turmeric
1 tsp Dried Oregano
1/2 tsp Cayenne Pepper
1/2 tbsp Liquid Aminos
Salt & Pepper to taste
3/4 cup Golden Raisins
Instructions:
On a medium-low heat pan, add your olive oil and squash.
Cook for about 10 minutes.
Add your walnuts and cook for another 10 minutes.
Stir consistently to avoid the walnuts burning and for them to release their natural oils.
When the squash become soft, add the red swiss chard.
Add spices and liquid aminos. Stir well.
Add the golden raisins. Cook for another few minutes.
Serve warm.
